Introduction

This salad is tasty, tangy, easy to make, and I actually like it way better than potato salad with the mayo. This salad is tasty, tangy, easy to make, and I actually like it way better than potato salad with the mayo.

Ingredients

    2 lbs red new potatoes or fingerling potatoes cut into bite size pieces
    2 tsp Dijon mustards ( I use Emerils but any will do)
    2 tbsp Fresh squeezed Lemon Juice
    2 tbsp Sherry Vinegar
    1 tbsp chopped shallots ( I add a bit more)
    2 tbsp Extra Virgin Olive Oil
    2 tbsp Fresh Dill chopped ( again I add a bit more)
    Sea Salt to taste
    Fresh Ground Black pepper to taste

Directions

Steam the bite size potatoes in a steamer basket above about 2 inches boiling water. Cover to steam, they steam much faster. While potatoes are steaming mix all other ingredients. Once potatoes are done let rest for about 5 then mix in with vinaigrette and toss to coat.
