Ingredients

    2 cans whole-kernel corn, drained
    1 can finely-diced tomatoes, drained
    2 cans black-eyed peas, drained and rinsed
    1 10-ounce bottle light Italian dressing
    2 cans diced tomatoes with green chilis
    1 large red onion, finely diced
    1 each red, green, and yellow bell pepper, finely diced
    2 tsp. salt
    3 tbsp. cilantro
    Tabasco to taste

Directions

Combine all ingredients, let set a minimum of 4 hours. (Overnight refrigeration is best). Serve with chips or as a salad dish. Will keep in fridge for at least one week.
