Number of Servings: 4

Ingredients

    1 Bell pepper
    1 cup dry quinoa
    3 medium stalks celery (leave them out if you're watching sodium)
    1/2 cup black beans
    1/2 cup sweet corn
    2 tbsp raw cilantro
    1 tbsp olive oil
    1 tbsp balsamic vinegar (or white vinegar)
    2 tsp sugar

Directions

Cook Quinoa and beans separately and allow to cool.

Dissolve the sugar in the oil and vinegar to make a dressing.

Chop celery, bell peppers and cilantro.

Combine all the above ingredients in a salad bowl and chill before serving.
