Ingredients

    DRESSING: (or use 1 cup prepared catalina dressing)
    dash black pepper
    1 Tbsp. cider vinegar
    2 Tbsp. catsup
    1/8 tsp. salt
    1/4 large onion, grated
    2 Tbsp. Splenda
    1/4 cup olive oil

    SALAD INGREDIENTS:
    3 cups cooked brown rice
    1 15.25 oz. can whole kernel sweet corn
    1 cup dry roasted sunflower seeds, unsalted
    2 cups fresh peas or frozen peas, thawed
    2 cups peaches, canned in lite syrup
    1/2 cup chopped red onion
    1/2 cup chopped fresh parsley

Directions

Mix together the first six dressing ingredients. Gradually beat in oil.
Mix together all the salad ingredients, including dressing, in a large bowl. Refrigerate until ready to serve.

Makes 20 servings. 1/2 cup each.
