low fat lentil soup that even my 14 yr old claims is "awesome" and easy to convert to vegetarian. Great to make on the weekend and take for office lunch all week. Ingredients

    1 bag lentils, dry
    2 1/2 boxes chicken stock, 32 oz
    2 lg fresh tomatoes (peeled and chopped)
    2 cloves garlic, crushed
    1 c carrots, chopped
    1 md onion, chopped
    2 c celery, chopped
    2 banana pepper, seeded chopped
    1 tbs ground cumin
    2 tsp thyme
    1/2 c fresh parsley, chopped
    1 tsp curry powder
    salt and pepper to taste


Directions

makes about 20 1 cup servings

Sort and wash lentils, put in large dutch oven or pot add chicken (vegtable) stock, add all vegtables. Bring to a slow boil, reduce heat and simmer for about 1 hour or until all is tender. Add seasonings and continue to simmer for another 30 minutes.
