Introduction

Ingredients

    4 cups fresh lettuce (romain, red leaf, baby spinach, etc)
    raw brocolli - about 1 cup floretts
    Fresh Tomatoe, diced
    fresh red/yellow/orange pepper, 1/2 sliced thin
    fresh sliced mushrooms - large handful
    1 grilled chicken breast (I grill several pounds each Sunday and use all week!!)
    any other raw veggies to your delight (onions, snap peas, cucs, corn, black beans, etc)
    2 tbs croutons (optional but worth it for the satisfying crunch)
    liberal shakes of Mrs. Dash (I like the original best)
    Juice and pulp from 1/2 fresh lime
    1 heaping TBS Extra Virgin Olive Oil (EVOO)
    liberal shakes of ground pepper
    a little garlic salt (optional)


Directions

chop/tear lettuce, thinly slice chicken and veggies - add spices, EVOO and the juice and pulp from 1/2 fresh lime and toss all in a large bowl.
This is a lot of salad for one serving but it fills me up with low calories/carbs - or you can eat half now and half later to go for the "more smaller meals" concept...
The lime juice, EVOO, ground pepper and Mrs. Dash is a refreshing, low cal alternative to bottled low cal dressings - after squeesing and pulping I throw the lime rind into my ice water for some extra flavor.
