Introduction

A black eyed pea and corn relish that tastes great hot, at room temperature, or chilled. A black eyed pea and corn relish that tastes great hot, at room temperature, or chilled.

Ingredients

    1 cup chopped onion
    2 tablespoons chopped garlic
    2 tablespoons coconut oil
    1/2 cup chopped red bell pepper
    1/2 cup chopped green bell pepper
    2 cups frozen corn kernels, thawed
    2 cups frozen black eyed peas, thawed
    1 cup chopped, seeded tomatoes
    salt & pepper to taste
    3 beef bouillon cubes
    1/2 cup to 1 cup water (depending on the consistency you want)

Directions

Saute the onion and garlic in the oil in a saucepan until the onion is tender. Stir in the bell peppers, water, bouillon, corn and peas. Cook for three minutes, stirring frequently. Add the tomato, salt & pepper and mix well. Cook for one minute longer or until heated through, stirring frequently.
If your frozen peas are NOT the pre-cooked type, you'll have to cook for 40 minutes instead of 3 minutes.
