Introduction

This is so easy & makes for a festive dish, especially during the holidays! It's great by itself if you're a vegetarian - the couscous provides 8g protein plus complex carbs. Ingredients

    1/3 c dry couscous (57 g)
    15 g almonds
    40 g sweetened dried cranberries
    1/2 c water or broth

Directions

Toast couscous in a small pan over medium heat, stirring constantly, for about 5 minutes. Add broth or water. Bring to boil, cover, and let stand for 5 minutes. Add toasted almonds and cranberries.
