Ingredients

    Red Potato,raw with skin, 4 small, quarterd
    Capers, 1 tbsp, drained
    Oikos Organic Greek Yogurt, Plain, 6 oz
    Black Olives, 8 jumbo minced
    Cilantro, raw, 3 tbsp minced
    Salt and Pepper to taste

Directions

Place water in a pot the size that will accomodate the amount of potatoes and bring to a boil. While waiting for the water to boil, you can cut the potatoes into quarters. You can also mince the olives and mince the cilantro (if you are not a fan of cilantro, you can use parsley.)

Place potatoes into the boiing pot and turn down heat to medium high and cook for 5-8 minutes being sure not to over cook the potatoes leaving them a little firm. Check with a fork at about 4 minutes into cooking.

Drain the potatoes in a collander and place them back in the pot or serving dish. Add the greek yogurt, capers, cilanrto and olives, dash with salt and pepper to taste and blend well.

Allow to sit for a few minutes before serving.
