This is my favorite soup! I have it at least once a week during cold weather. It is low fat, very filling and children love it, too, so they get the veggies they need! it is packed full of nutrition. Ingredients

2 boneless chicken breasts
1 large can chicken noodle soup
1 large box of chicken broth
1/2 cup lemon juice (don't leave this out!)
4 small white potatoes
1/2 cup uncooked rice (or 1 cup cooked rice)
1 head of cabbage
2 cups cauliflower
20 baby carrots
2 tsp garlic/herb seasonings
1 tsp. lemon pepper
salt and pepper to taste
Cook the chicken with your favorite chicken seasonings!
Directions
Broil the chicken breasts while you put the noodle soup (save the noodles back to add later) and chicken broth into a large pot. Add the lemon juice (do not leave out the lemon juice), seasonings, potatoes, carrots, cabbage, rice and onions, bring to a boil and cook for 10 minutes. Then add the cauliflower, mushrooms and any other veggies you really love (I sometimes add canned sweet corn). Cook 10 more minutes at a boil, keeping the veggies covered by adding water if necessary. Turn off the soup and add the noodles back to the soup. Add the cooked chicken, let sit for 5 minutes and serve. Excellent with cornbread! Freezes well!

Thanks so much!! You can add or subtract as U wish. The main thing is to keep the Condensed soup, broth, lemon juice and seasonings as the base--the rest you can get creative with! Also good with pork. It freezes well, so make a large batch and freeze servings for later!!
