Introduction

I was trying to make a "cleaner" version of cornbread to go w/ our chili dinner and used what I had on hand. I am sure you could reduce the honey and save some calories that way. Since this was my first experiment, this is how I did it. This was the BEST corn bread I have EVER made! Ingredients

    * *Alber's Yellow Corn Meal, 1 cup
    * *Whole Wheat Flour, 1 cup (remove)

    * Baking Powder, 1 tbsp (remove)
    * Salt, 1 tsp (remove)
    * Buttermilk, low fat, 1 cup (remove)
    * Honey, .25 cup (remove)
    * Butter, salted, 1.5 tbsp (remove)
    * Brown Cow plain nonfat yogurt, .25 cup (remove)
    * Egg, fresh, 1 large (remove)

Directions

preheat oven to 400. grease 9x9 pan.
sift all dry ingredients
mix all wet ingredients in separate bowl, and add to dry. Mix together. Pour into pan and bake 20-25 min.

    I made a similar version with skim milk, Greek yogurt, sugar, self-rising cornmeal. Instead of buttermilk, honey and using baking powder. We always put the butter into the skillet and in the oven while mixing ingredients then pour the butter into the mix before baking the corn bread. Very moist! - 11/17/14

    Awesome recipe!Everyone in the family loved it! I served it with vegetarian picadillo. Glad I was able to find a recipe without lots of processed ingredients. I will add this to my favorites - 5/23/12

    wayyyy good. I did cut the honey and butter in about half, and fyi, homemade greek yogurt works too. I made a half recipe into muffins (375 for 15 min in convection oven) This will be a go-to. - 2/23/12
