Ingredients

1 1/2 Lb Sausage, sweet or hot, cut into 1/2" slices
1 Lb Kale, fresh washed (or 1 Lb frozen chopped Kale)
1 Cup yellow onion, finely chopped
4 to 6 cloves garlic, finely chopped
2 Tbsp oil from sausage
2 Tbsp butter
2 Quarts chicken broth
16 oz can white beans (cannellini), rinsed
Black pepper
Salt
Directions
If using fresh kale, strip the leaves from the washed kale & cut diagonally into wide slices. If using frozen open bag & set aside.
In a medium stock pot (or large sauce pot) add cut sausage. When done pour into bowl & set aside, leaving 2 tbsp of oil from cooking sausage in pan.
Add butter, saute' onions & garlic for a couple minutes. Add beans. Cook a few more minutes.
Add the kale & cooked sausage. Simmer for an additional 5 - 10 minutes. Add salt & pepper to taste.
Serve with fresh bread & parmesan cheese.
Optional: May add potatoes, yummier but not as healthy.
