Introduction
I've adapted a few recipes to make this version. You can also mix in bacon, green onions, or add roasted garlic to make a garlic mashed potato version. Ingredients

-2 packages of frozen cauliflower or 2 medium heads of cauliflower
-4 oz cream cheese
-1/4 cup sour cream
-1.5 cup shredded monterey jack cheese
-.5 cup shredded cheddar
-salt and pepper to taste
Directions
Makes 10-12 servings
1. Microwave, steam or boil cauliflower until very tender. (steaming seems to yield the best results because there is less water).
2. Drain the cauliflower and then hand mash leaving some lumps or mash to a smooth consistency.
3. add the rest of the ingredients while cauliflower is still hot and mix to combine.
4. Some people put mixture in a casserole dish and bake for 20-30 minutes at about 350 degrees, but it isn't necessary.
