    3 cups Zucchini, grated
    1/2 cup dry quick cook oats
    1/2 cup Egg Beaters, Southwestern liquid egg substitute
    4 Tblsp chopped onion
    3 tsp (1 Tblsp) Mrs. Dash Southwest Chipotle
    3 Tblsp. finely shredded Parmesan cheese


Preheat oven to 350 degrees F.
Grate zucchini to make 3 cups. add egg beaters, onion, oats, and Mrs. Dash. Mix together well.
Spray a glass pie plate with cooking spray.
Pour zuchini mixture into pie plate and spread evenly. Bake about 30 minutes or until set and lightly golden. Right before removing from oven, sprinkle parmesan on top and let melt.
Serve warm.
Cut into 4 wedges for 4 servings.
