Introduction

Ingredients

    2 Large Onions
    4 slices bacon
    1 tsp fresh black pepper
    40ml lemon juice, preferably freshly squeezed
    4 twigs of fresh rosemary or tooth picks

Directions

Before you start, get a pot of boiling water, big enough for the onions going and get a bowl of ice water ready. Peel the onions and blanch until the onion starts to go tender. Remove them from the boiling water and put directly into the ice bath to cool down,
Season the bacon with the black pepper
Half each onion and wrap each half with two pieces of bacon around each. Secure the bacon with the rosemary twigs.
Cook on the BBQ until the bacon is crisping up nicely.
Finish off with a squeeze of lemon juice.

If you want to cut the fat, try using sliced smoked turkey instead of the bacon. Just brush it lightly with some olive oil.
