Introduction
Mixed rice, vegetables and greens with an awesome dressing! Very colourful and tasty, lots of interesting textures. Makes a great vegan main-dish salad. Semi-raw. Ingredients

Rice pilaf:
1/2 c dry red rice
1/4 cup dry wild rice
1/2 cup dry brown basmati rice
3-4 cups boiling water
2t Bragg liquid aminos
2t tamari
3T lime juice
4T unseasoned rice vinegar
2t sesame oil
2t olive, hemp or flax oil
1/4 t grated fresh ginger
1/4 t grated fresh garlic
1 kaffir lime leaf, ground
a drop or two of chili oil or a few red pepper flakes
salad:
6 oz mixed baby greens
2 cups sprouted green and black lentils
2cups sliced cucumbers
1 avocado, cubed or sliced
1 cup grated carrot
1/c cup grated beet (rinsed)
1/4 cup sunflower seeds
Directions
Combine rices and boiling water. Cover and let sit for 1/2-1 hour, till tender. Drain, rinse, drain.
combine dressing ingredients and set aside. Pour 2/3rds of the dressing over the grains and toss. Set aside for an hour or more.
Lay out greens on a platter. Cover with grains mixture in the middle and surround it with all the other veggies and such. Drizzle the veggies with the remaining dressing and serve.
