Introduction
Very low calorie, and hearty Broccoli & Cheese soup. The richness of Velvetta is combined with broccoli and yellow summer squash for a filling low-calorie meal. Ingredients

2 (1 lb) packages Broccoli or a mixture of fresh and frozen
4 Medium Yellow Summer Squash (can also use cauliflower or your favorite vegetable)
3 (10.75 oz) 99% FF Chicken Broth
12 oz. Light Velveeta Cheese Product, cubed
2 tbsp. Cornstarch
Salt & Pepper to taste
Directions
1. Simmer chicken broth and summer squash for about 10 minutes or until squash is soft.
2. Add brocolli and cook for another 10 minutes, turning heat to medium.
3. Slice and cube Velveeta and add to soup - lower heat back to simmer.
4. Mix cornstarch with cold water and slowly add to soup. Can be increased until soup reaches desired consistency (will thicken as it cools). Add salt & pepper to taste.
Makes 8 large (about 1 1/2 cup) servings. Enjoy!
