Ingredients

    1 tsp. canola oil
    2 cloves of garlic, minced
    2 tsp. peeled, grated ginger
    1 cup fresh shitake mushrooms, sliced
    2 black radishes, cut into half-moon pieces
    1 8-oz. can of whole water chestnuts, cut into halves or quarters
    3 1/2 cups cooked long-grain brown rice (from 1 1/2 cups dry)
    1 tsp. sesame oil
    2 TBS shoyu (soy sauce)
    1 tsp sugar

Directions

In a large saute pan, cook the garlic and ginger in the canola oil over medium heat for 1-2 minutes. Add the mushrooms, radishes, and water chestnuts. Cook for about 5 minutes until vegetables soften. Add rice, shoyu, sesame oil, and sugar. Cook for 6-7 more minutes, until rice is heated through and dries out slightly.

Makes 4 1-cup servings.
