Introduction

I love these little quiches. There perfect for warming up in the microwave. You can add as many veggies as you like. I love bell pepper and onions, but the person I am making this for doesn't, so i put scallions and peppers on half for myself! I love these little quiches. Ingredients

    2 small zucchini
    1 tbsp. minced garlic
    Pinch of Cayenne Pepper
    Black Pepper
    4 eggs
    1/2 cup of whole wheat flour
    1/4 tsp. baking powder
    1/4 tsp. salt
    1 1/3 cup of milk
    2 Tomato - sliced
    1 oz of light mozzarella cheese
    1 ounce cup of fat free cheddar cheese or mozzarella cheese
    1/4 cup of scallions
    Parsley (optional)

    For someone who doesn't like a particular vegetable, I top that on half, so they don't have to get it, kind of like a pizza!

Directions

Preheat oven to 400

In a skillet, add some vegetable spray and add zucchini, and garlic. Sprinkle with black pepper and some cayenne for some spice.

In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then add mozzarella cheese, one diced tomato and zucchini mixture.

Pour quiche base into prepared pan. Top with remaining tomatoes and cheddar cheese. (optional) Sprinkle with parsley for color.

Bake for 25 minutes, or until center is set and the outside edge is golden brown.

Let set for 5 minutes, then slice and serve.
