Introduction
This is a SUPERB alternative to heavy pasta salads. Great for Summer, and easily adaptable to the veg of your choice. The key things are the krab, green onions, tomatoes and cukes; you can add anything else really! You could EVEN use real crab if you want to (hello, moneybags!) but I like this fine. Ingredients

1 1-lb package flaked style imitation krab (Surimi)
1 bunch green onions, chopped, about 2 cups
4 medium tomatoes, seeded and diced
1 English hothouse cucumber, diced. (These are thelong ones wrapped in plastic. I use these because their seeds are small. If you use regular ones you might want to cut lengthwise and scrape out the seeds.)
1 cup shelled edamame (this is where you could use variations like small pieces of broccoli, green beans, sugar snap peas, etc. -- just something with a little "bite".)
For dressing:
3/4 cup reduced-fat mayonnaise (I'm digging the olive oil ones these days)
Enough Nakano Seasoned Rice Wine Vinegar to make the mayo pancake-batter consistency; about 3 tablespoons.
Directions
Put all of the cut up veggies in a large bowl (I like to suspend a colander above the bowl and throw everything in there as I'm cutting it all up -- that way, any excess juices will run out so you don't end up with too watery of a salad.)
Add the krab and squoosh it around with your hands to "flake" it.
Add the dressing and stir.
Makes about 8 1-cup servings.
