Ingredients

    1 quart half & half - fat free
    3 cups of egg beaters
    1 teaspoon of salt
    Freshly ground black pepper to taste
    13 slices of wonder bread (don't use high quality bread)
    1lb of low fat ham
    half lb of onion
    half lb of red pepper/yellow pepper
    1/2 cup of scallions sliced thin
    12 oz of low fat extra sharp chedder

Directions

Whisk half & half, eggs, salt, and pepper to taste in a bowl until smooth.

Spray 13 by 9 in baking dish with vegetable oil spray Line bottom of baking dish wiht 6 slices of bread. If necessary, cut strips and fit them into any gaps. Scatter half of the meat and veggies over bread, then sprinkle with half of he scallions and half the cheese. Pour 1 cup of egg mixture over bread. Make another layerwith remaining bread, cutting strips of bread to fill any spaces as necessary. Top with remaining meat, veggies, scallions, and cheese. Slowly poor remaining egg mixxture over bread.
Cover strata with plastic wrap. Lightly weight strata and let is stand for at least 15 minutes.
Adjust oven rack to middle position and heat over 325 degrees.
Bake strata until custard is just set, about 50 minutes. Leaving baking dish on oven rack turn on boiler and broil until strata is spotty brown and puffy, about 5 minutes.
Remove from oven and let stand for 8 - 10 minutes. Cut strata into portions and serve.
