Introduction

Fat Free and fast as making a bowl of oatmeal! This is an adaptation of granny's recipe. It can be baked in the oven for 45 min to an hour or you can pop it in the microwave! Ingredients

    4c. fat free bread cubes (from ends you saves in freezer)
    2c. water or skim milk (hot)
    2/3c. brown sugar
    1/2c. raisins
    2 apples, sliced thin or canned peaches work well
    1/2 tsp. cinnamon/nutmeg/allspice
    1 tsp. vanilla
    3 egg whites

Directions

Combine bread cubes, raisins, and apples in large bowl. Add water or milk and sugar. Mix thoroughly and let stand for 20-30 min. Add beaten egg whites (just til foamy), cinnamon, and vanilla. Mix thoroughly. Pour into a 1 1/2-quart sprayed casserole. Microwave uncovered for 4-5 min. or until set. You can also bake for 45 min to an hour

    I’ve never tried to microwave bread pudding. Will have to give this a try. - 2/15/20
