Ingredients

    Summer squash, 4 small
    Red Ripe Tomatoes, 2 large
    Green bell Pepper, 1 large
    Olive Oil, Extra Virgin, 1 Tablespoon
    Diced garlic, 3 cloves

Directions

Simple! Chop up the veggies, toss them with the garlic and oil in a pyrex pan and place them right up under the broiler on high for about 15 minutes.

Serving Size: Approximately a cup to a cup and a half
