Number of Servings: 6

Ingredients

    Almond flour, 1 cup
    Flax Seed Meal (ground flax), 16 tbsp
    Baking Soda, 2 tsp
    Salt, 1 tsp
    Cinnamon, ground, 2 tsp
    Nutmeg, ground, 1 tsp
    Medjool dates, 8 date, pitted
    Egg, fresh, 8 large
    Coconut Oil, 4 tbsp
    Water, tap, 1.334 cup (8 fl oz)
    Sesame Seeds, .5 cup
    Sunflower Seeds, without salt, .5 cup, hulled
    Coconut flake, unsweetened, 4 oz
    Apples, dried, 168 grams

Directions

1.In a large bowl combine almond flour, flax meal, cinnamon, nutmeg, baking soda and salt
2.In a blender, blend dates, dried apples, eggs, coconut oil and water on high speed until very smooth
3.Mix wet ingredients into dry, then stir in sesame seeds, sunflower seeds, shredded coconut, and pecans
4.Spoon batter (I weighted out one 257 gram portion into each muffin tin cup) into greased coconut oil muffin tin cup.
Bake at 350° for 30-35 minutes.
Cool and serve
