Introduction

I sauteed the zucchini and mushrooms in a little butter, just enough to soften, then chopped, diced, and added the rest together. Wonderful Salad!! I also mixed the last 2 ingredients together to make the "avocodo ranch" salad dressing, and then added it per salad. The amounts are guesstimated. Ingredients

    Romaine Lettuce
    Baby Spinach
    Tomato
    Cucumber
    Zucchini
    Mushrooms
    Black beans, canned
    Corn, small can
    Long Grain & Wild Rice (Uncle Ben's Microwave Bag)
    Cheddar Cheese, shredded
    Hard boiled egg (2)
    Guacomole
    Ranch Dressing

Directions

The only cooking is to sautee' the zucchini and the mushrooms for a few minutes (I used butter substitute) just until softened. Chop/dice/rice the other ingredients as desired and mix together. WONDERFUL salad for a hot summer day! My husband and Iove this for dinner.
