Introduction

I found this recipe in a book at the library. It looked so good I had to make it.

Oh and for those on weight watchers this equals 4 point plus points.

Number of Servings: 1

Ingredients

    1 large onion
1/2 cup fiber one bran cereal (origanl)
    dash of salt
optional: pepper, oregano, onion powder, garlic powder, etc.

Directions

preheat oven to 375 degrees.

Cut the ends off of the onion, and remove the outer layer.
cut onion into 1/2-inch-wide slices, and separate into rings

Using a blender or fNext, fill a small bowl (just large enough for onion rings to fit in) with egg substitute.

One by One, coat each ring first in egg and then in the "breadcrumbs" (give each ring a shake after the egg bath)

Evenly place rings on a backing dish sprayed with nonstick cooking spray.

Cook for 20 to 25 minutes, flipping rings over about halfway through.

  • Incredible!
I noticed in your nutritional value that you have a quarter cup of eggbeaters, but it's not in your actual recipe ingredients. Also, I think there is a problem with the second paragraph - I assume it is supposed to say to grind the Fiber One cereal in a blender or food processor? - 7/5/12
