Introduction

Super easy! Tastes Amazing! I bake this in a large baking dish, so no fuss scooping everything back in to the potato. Super easy! Tastes Amazing! I bake this in a large baking dish, so no fuss scooping everything back in to the potato.
Number of Servings: 10

Ingredients

    30 oz Potatoes (850g)
    9 oz Greek Yogurt, Plain (2%)
    about 0.5 cup of Skim Milk
    3 tsp Becel light Margerine
    5 slices of Bacon
    4 "small" Spring onions or Scallions
    2 tsp Salt
    4 Dashes of Black Pepper

Directions

Pre-heat the oven at 350 F
Wash off the dirt from the Potatoes. Punch a few holes in each potato with a fork, and place on a baking sheet. Bake for an hour at 350 degrees, till the potatoes are soft all the way through. Take out a let cool for about 10 min.

Remove skins and put the rest in a large mixing bowl. (Be careful not to burn your fingers)
Then add a small scoop or 3tps of light Margerine and let it melt in the hot potatoes (mash).
Then add the Greek Yogurt, and whisk it all together with a hand mixer, add in the milk till the mash gets a smooth'ish texture.
Chop the spring onions in to small pieces and add them to the potato mix.
Cook the Bacon either in the oven or Microwave. Tip for the Microwave: Lay the bacon on a plate between two sheets of folded paper towel and cook for 3.5-4 min.
Cut the cooked/baked bacon in to small pieces and add them to the potatoes.
Stir it all together and season with salt and pepper.
Scoop the potatoes into a large baking dish and bake for 20 to 30 min on 355 degrees. And then you are ready to serve!

You can sprinkle a little cheese on top before it goes in the oven again, but I can't really taste the difference, so I would rather spend the calories on something else :)
