Introduction

This is similar to the Dukan oat bran pancake and makes a large and satisfying pancake. I like to top mine with a little pure maple syrup - so my version has more sugar than the Dukan recipe. If you want something closer to the Dukan recipe you could cut down on sugar by not using the maple syrup and choosing plain yogurt. This is a gluten free recipe and contains no wheat. Ingredients

    1/4 cup oat bran (not oatmeal or steel cut oats)
    4 oz greek vanilla yogurt
    1 extra large egg
    1g baking soda (1g = pinch)
    1g baking powder (1g = pinch)
    2 tbsp. maple syrup
    Butter flavored Pam spray

Directions

You can make as 2 small or 1 large pancake.
In a medium bowl, beat oat bran, yogurt, egg, pinch each of baking soda & baking powder and vanilla. Put a small (10") non-stick pan on medium heat and spray pan with butter flavored Pam. Pour in batter and cook on medium heat for 2-3 minutes until bubbles form on top and it is light brown on the bottom. Turn pancake over with a large spatula and cook for 2 minutes on the other side until firm. Top pancake with maple syrup, if desired.
