Ingredients

    1 cup quinoa
    1 each red, orange, yellow bell pepper
    4 roma tomatoes
    1 cucumber
    1 bunch cilantro
    juice of 1 lime
    as much olive oil as lime
    cumin, coriander, garlic, salt to taste

Directions

Bring 1 cups quinoa to boil in 2 cups water (and a pinch of salt), simmer 15 mins. and remove from heat. Let cool, fluff with fork and add to finely chopped veggies. Whisk or shake up lime juice with olive oil and desired spices. Toss altogether. Might like to add some heat...
