Ingredients

    1/4 cup Lime Juice
    1/4 tsp White Pepper
    1/4 tsp Black Pepper
    1/4 cup Diced Marinated Jalapeno Peppers
    1/4 tsp Salt
    1/4 cup Olive Oil
    3 cups Water
    1 1/2 cup Quinoa
    3/4 cup Peeled, Sliced, Diced Cucumber
    3/4 cup Diced Tomato
    3/4 cup Red Bell Pepper
    1/4 cup Yellow Bell Pepper
    1/4 cup Diced Onion
    1/4 cup Parsley

Directions

1. Make a vinaigrette using lime juice, white pepper, black pepper, jalapeno peppers, salt and olive oil.

2. Cook Quinoa, make sure not to over cook.

3. Mix the quinoa with the cucumber, tomato, onion, bell peppers and then add vinaigrette.

Serve at room temperature or cold.
