Ingredients

    Tomatillos or Green Tomatoes
    Cucumber (seeded/skin on)
    Avocado
    Yellow Pepper (or Red or Green if you prefer)
    Jalapeno
    Scallions
    Cilantro
    Vinegar - cider, rice
    Olive Oil
    Salt to taste

Directions

Chop tomatillos, cukes, avocados, cilantro, peppers, jalapeno, scallions. Toss in a blender in batches with the oil, vinegar and salt. Blend until creamy (may need to add a bit of water too).
