Introduction

Ingredients

    8 small potatoes (enough for approx 2.5 cups diced)
    1 pkg of frozen chopped kale
    2 cans chicken broth (14.5 oz/each)
    7.5 cups of water (approx)
    1 can kidney beans (light or dark)
    1.5 lbs of Portuguese Linguica or Chourico or cobination of the two
    (Substitute Polish sausage if you don't have the Portuguese version in your area)

Directions

Cook and drain diced potatoes. Place them back into a large soup pot. Add 2 cans of chicken broth (14.5 oz cans). Add enough water to make approximately 10 cups of liquid (counting the chicken broth). Add the Portuguese sausage or Turkey (called Linguica or Chourico), sliced into bite size pieces. Add 1 can of drained kidney beans. Let everything cook for about 1/2 hour and then add a box of frozen chopped kale and cook for 1/2 more. Serve with Portuguese or Italian bread.

    i made this soup. i have my own version of kale soup tha i was brought up with. live in New Bedford, MA where there is a big portuguese community we all have different versions of this soup. really good though. - 7/31/08
