Ingredients

8 cups old fashioned rolled oats
2 cups sliced almonds
2 cups dried cranberries
200 grams dried apricots (chopped)
1/4 cup brown sugar
3 tbsp butter
2 tbsp canola oil
Cinnamon to taste
Directions
Melt butter, canola oil and brown sugar together in a small sauce pan. Combine butter mixture with oats in a large bowl.
Spread oats in a single layer on baking sheets (may take as many as three sheets). Bake for 15 minutes in a 350 degree F over. Toss oats and dust with cinnamon. Bake for an additional 10-12 minutes or until oats have browned slightly and taken on a nutty flavor.
Toast almonds for 8-10 minutes in 350 degree over.
Combine oats, almonds and dried fruits in a large bowl. Portion into 1/2 cup servings and store in snack size food baggies.
Great on yogurt or mixed with a packet of instant plain oatmeal for breakfast.
