Introduction

Healthy and delicious alternative to standard breakfast fare. Use Belgium Waffle Maker for light and airy texture. Extra lightness can be added if you fold in two egg whites beaten stiff.

I like to eat these without butter or syrup. I make a batch and freeze them for later use. Pop into convection toaster oven 325 degrees for 5-7 minutes and enjoy.

Ingredients

    Dry Ingredients:
    1 c All Purpose Flour
    1/4 c Whole Wheat Flour
    1/8 c Wheat Bran
    1/8 C Milled Flax Seed
    1 t baking soda
    1 t baking powder
    1/2 c Saco Cultured Buttermilk Blend (dry/powdered)
    1/2 c Splenda Granulated
    1/4 t nutmeg
    1/4 t cinnamon
    Zest of one orange
    Wet Ingredients:
    1/2 applesauce, unsweetened
    1/2 c egg beaters
    1/4 c fat free plain greek yogurt
    juice of orange (1/4 C)
    1 t orange extract
    1 t vanilla extract
    1 1/4-1 1 1/2 c water

Directions

Pre-heat Belgium Waffle Maker, Flip Style, setting 4 or 5.

Blend all dry ingredients in large bowl, whisk to get rid of any lumps. If baking powder is clumping, add to mix after sifting to avoid chunks. By adding orange zest to dry ingredients, the zest gets thoroughly mixed throughout batter.

In separate bowl, mix all wet ingredients, adding only 1 cup of water initially.

Add wet ingredients to dry ingredients, blending only to smooth batter. Add additional water until batter is the consistency of a thin cake batter...too thick will make waffle too heavy.

Spray waffle maker with butter flavored cooking spray before adding batter, 1/4 tp 1/3 c depending on size of waffle maker. Use waffle maker's automatic setting 4-5 or bake 3-5 minutes. If you want a crispier waffle, cook longer but be careful not to burn it.

Don't add too much batter or it will overflow waffle maker--messy.
