Ingredients

2 onions, peeled and chopped
8 carrots, peeled and chopped
5 pears, peeled, cored, and chopped
3 cups roasted red peppers, seeded and chopped
6 Tbsp butter or olive oil
2 cups coconut milk (or whole milk, or whipping cream)
Salt and ground pepper to taste
Directions
1. Cook onions and carrots in butter or olive oil for 10 minutes, or until onions are soft.
2. Add broth, peppers and pears and simmer for 20 minutes, or until carrots and pears are soft.
3. Add milk, salt and pepper, and puree.
