Introduction

These are great by themselves, but are also quite tasty as a sandwich on bun with veggies. These are great by themselves, but are also quite tasty as a sandwich on bun with veggies.

Ingredients

    1 can pink salmon
    1 egg
    1/3 c. self-rising cornmeal
    1/2 c. buttermilk
    2 T. all-purpose flour
    1/8 t. garlic salt

Directions

Drain Salmon, remove skin and bones and flake. Place salmon in a medium bowl. Stir in other ingredients until blended. Batter will be wet. Drop salmon mixture by spoonful into hot Canola Oil in a large skillet over medium high heat and flatten with fork. Fry 2-3 min. on each side or until browned. Drain on paper towels.

Serving Size: Makes 6 lge cakes or 18 small croquettes
