Please not that when calculating nutritional table that some ingredients were not listed. Could not find rice papers and sweet chilli sauce. So count is not accurate.
You can use any filling you like or have in fridge.
12 x 22cm round rice papers
1 lebanese cucumber, cut into short thin sticks
1 small red capsicum cut into short thin sticks
1 large carrot cut into short thin sticks
1 small avocado cut into short thin slices
50g snow peas cut into short thin strips
1/2 cup fresh coriander leaves
1/2 cup fresh mint leaves
5og unslated roasted peanuts finely chopped
dipping sauce
3 tablespoons sweet chilli sauce
11/2 tablespoons soy sauce
3 tablespoons fresh lime juice
optional - drop of sesame oil
Directions
makes 12 rolls
serves 4 (3 rolls each as snack or entree)
These are great to make as you eat as the kids love to pick their own fillings and roll. Also great to make ahead of time for a healthy finger food. If u make ahead of time cover with damp tea towel and plastic wrap and refridgerate.
1. Combine all sauce ingredients and set aside.
2. Half fill a large bowl with warm water. Dip one wrapper in for 20 secs or until just soft. Drain off excess water and place on clean surface.
3. Place a few of each ingredients on the wrapper about 3 cm from the base.
4. Fold up from the bottom and then fold in the sides and roll up.
5. Serve with the dipping sauce.
