The reason the recipe is small is because I made 1/2 the recipe in regular pancakes for my daughter to eat. You could easily double everything to feed the whole family.

Ingredients

1 Cup Bisquick
1/2 Cup Libby's Pure Pumpkin
1/4 Cup Brown Sugar
Dash salt
1/2 tsp Baking Powder
1/2 tsp Vanilla Extract
1 egg
1 1/2 Cup 2% Milk
Dash of Pumpkin Pie Spice
Optional: Top with Toasted Pecans and Pure Maple Syrup
Directions
Mix altogether with whisk. Then use about a 1/2 measuring cup to pour on griddle. Cook at 250 on griddle until the edges look done and bubbles are on top. Flip, and cook a minute or so more.
Optional: I like to top with toasted pecans and pure maple syrup.
