Introduction

Spanakopita, aka Spinach Pie, is an absolutely delicious Greek/Mediterranean dish that I always serve around the Holidays! It's warm, gooey, herbed, and creamy; the perfect comfort food! Ingredients

    3, 8 oz packages Fat Free Cream Cheese
    1 Cup, Light Sour Cream
    1 Cup, Shredded Pizza Cheese Blend (Kroger Brand)
    8 oz. President, Fat Free Feta Cheese (crumbled)
    3 Large Eggs, Lightly Beaten
    1/8 Cup Pompeian Extra Virgin Olive Oil
    1.5 Cup Fresh Chopped Onion
    24 oz Frozen Spinach (Cut Leaf or Chopped)
    11 Slices, Private Selection Center-Cut Bacon
    1.5 Cup, Fresh Dill
    1/3 Cup ,Fresh Basil
    Athens Philo Dough- 1 Roll (About 40 Sheets)

    Other:
    9x13 Baking Pan or Oven-Safe Glassware
    Electric Mixer
    Large Mixing Bowl
    Olive Oil Cooking Spray
    Sharp Knife
    Rubber Spatula

Tips

1. If your spinach is frozen, then defrost it a little. While it is still cold (but not frozen), take spinach out of bag wrap and place in a thick paper towel, and squeeze out the extra moisture.

2. Make Sure your bacon is cooled before adding it to the mix. Don't want to "cook" the dairy ingredients!

3. I love using fresh herbs whenever I can, but if not available to you, dried dill weed and basil taste just fine too!

4. Spanakopita is even better cold, prepare a day before, refrigerate, and serve chilled.

5. It's best to cut this after it has cooled and "set", if it is cut hot then it will not cut, but, "drag" the spinach along inside the pie.


Directions

**Preheat Oven to 350 Degrees!**

**Pan Fry Bacon, and Set Aside to Cool**

1. In a large mixing bowl, Combine: Cream Cheese, Light Sour Cream, Shredded Cheese.
2. Cut Cheeses together, then add: Eggs, Olive Oil, Dill, and Basil.
3. With a Mixer, combine ingredients together until it is creamy, and not lumpy.
4. Makes sure you bacon is cool, and chop the bacon into bits.
5. Add to Cream Cheese Mix: Chopped Spinach, Onion, and Cooled Chopped Bacon.
6. MIX THOROUGHLY. Over Mixing is not an issue, just makes sure everything is very well combined.

**This is Where it Gets Hands On**
1. Spray a 9x13 pan with Olive Oil Cooking Spray.
2. Add, 1 sheet of philo dough to the bottom of the pan, and lightly spray.
3. Repeat This Step, until you have 4 sheets layered on the bottom of the pan.
4. On top of philo layers add: 1-2 Cups of Spinach Filling.
5. Spread Evenly, and around the edges.
6. Repeat the philo layering process.
7. Repeat Pouring the mix to create filled layers.
**You Will Use Around 30 sheets or more**

8. The top layer of the Spanakopita, will be covered with 5-6 sheets of philo, and generously sprayed with Olive Oil Cooking Spray.

9. Place in the oven covered at 350 degrees, for about 30 minutes.
10. After 30 minutes of baking, remove cover and let cook for another 15 minutes to nicely brown the top crust.

Let Cool Completely Before Cutting and Serving!
Sliced into 32 squares. 32 servings.
