    Tomatoes (coarsely chopped) 1 medium
    Cucumber with peel (thinly chopped) 1/2 of 8"
    Cilantro leaves (thinly chopped) 3 tbsp
    Mint Leaves (thinly chopped) 2 tbsp
    fresh lemon juice 1/2 lemon
    salt a pinch
    pepper 1/2 tsp
