Ingredients

    *Poblano Pepper, Roasted (2 Pepper),
    Olive Oil, .50 tbsp
    Onions, raw chopped, 1 large
    Garlic, 4 cloves chopped
    Mushrooms, fresh, 1 cup, pieces or slices (sliced)
    Chicken Breast, no skin, 12 ounces (cubed)
    **McCormick ground cumin, 1 tbsp
    *Coriander, 2 tsp (ground)
    *Beans-Great Value Great Northern Beans 2 cans =(1/2 cup), 8 serving
    Cream of Chicken Soup, 1 can (10.75 oz) go low sodium
    Cilantro, raw, 5 tbsp
    Lime Juice, 1 wedge yields optional
    Chicken broth 1 3/4 cup ( low Sodium)

Tips

Poblano peppers can be roasted in the broiler, outdoor grill or griddle then put in plastic back then peal once clean deseed and devine the inside of the pepper. Chop it up.


Directions

Broil Poblano Peppers (see below)
Add oil to pan cook onions & garlic low heat then add chicken - add seasonings - cumin and coriander. Once chicken is cooked add chopped mushrooms the beans, broth, peppers and cream of chickent soup!

Chop Cilantro and lime wedges for garnish.
