Introduction

Homemade version of Panera's Lemon Chicken Orzo soup! Homemade version of Panera's Lemon Chicken Orzo soup!
Number of Servings: 4

Ingredients

    8 cups chicken broth
    1 chicken breast
    1 medium carrot, peeled & cut into small pieces
    1/4 cup chopped spinach
    1/4 tsp black pepper
    1/4 tsp oregano
    1 Tbsp basil
    1 cup orzo, dry
    1/4 cup lemon juice

Tips

I used chicken stock instead of broth because it had less sodium. Also, you can place your chicken breast in frozen and it will turn out perfectly! Feel free to add other veggies, such as celery or onion, to suit your taste!


Directions

Place all ingredients except the lemon juice in a 4-quart pot. Bring to a boil, covered, over high heat. Once boiling, reduce to low and simmer while covered for 30 minutes. Then, remove chicken, slice and return to the pot. Add lemon juice and enjoy!

Serving Size: Makes 8 1-cup servings
