Ingredients

All Purpose Flour- 2 cups
Granulated Sugar, 3/4 cup
Baking Powder, 2 tsp
Baking Soda, 1/2 tsp
Salt, 1/2 tsp
Egg, 1 large
Orange Juice, 3/4cup
Vegetable Oil, 1/4 cup
Orange Zest, 1 tsp grated
Fresh Cranberries, 1 cup, chopped
Directions
Preheat oven to 350.
Mix together dry ingredients (Flour, Sugar, BP, BS, Salt) on a bowl. Mix wet ingredients in separate boil (Juice, egg, oil, zest). Add wet ingredients to dry ingredients and mix just to combine (don't overmix). Stir in cranberries.
Makes 12 muffins.
Portion mix into paper lined muffin pan and bake in 350 degree oven for 15-20 minutes.

Excellent. I had oranges that were past there best. Rather than juicing them, I chopped them in half, took out the obvious seeds, cooked them in my pressure cooker for about 20 minutes and whizzed it up with a hand blender. I used 1 cup of orange puree instead of orange juice. Added a tbsp water too - 3/29/11
