Ingredients

    1 eggplant
    1 head of cabbage
    1 yellow pepper
    1 green pepper
    1 onion
    4 stalks of celery
    1 cup of baby carrots
    1 medium sweet potato
    3 cups of chicken broth
    1 can stewed tomatoes
    1 can of tomatoes with habanero peppers
    2 T ground black pepper
    2 T of Tony Chacerones Creole Seasoning
    garlic powder and salt to taste.

Tips

I really havent portioned it out but if it is only 12 servings they would be real big ones. It is something to eat on any time. Can add it to some steamed rice, or saute some chicken and use it as a base. Just good stuff


Directions

wash and chop veggies, (I like mine chunky). Put the chicken breast in 1st and cover it with ground pepper and let it start cooking while chopping veggies. And veggies, broth, canned tomatoes and seasoning to taste. Walk away from the crock pot occasionally stirring. Yummy and only about 100 calories, if that for a big ole bowl.
