Ingredients

1 cup granulated sugar
1/2 cooked mashed pumpkin
1/2 cup unsweetened applesauce
1/2 cup vegetable oil
2 large eggs
1 1/2 cup Whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground nutmeg
(or freshly grated whole nutmeg)
1/4 tsp allspice
1/2 cup chopped walnuts
1/4 cup dry cranberries "craisins"
Directions
Preheat Oven to 350 degrees Farenhiet.
Mix sugar and wet ingredients.
In separate bowl sift flour, baking soda, baking powder,
salt, cinamon, nutmeg, and allspice.
Add dry ingredients slowly to wet.
Mix in chopped walnuts and dry cranberries.
Prepare two small loaf pans with oil or shortening or cooking spray and dust with flour.
Pour mixture into pans and bake for 60 minutes or until fork comes out of center clean.
Set on rack to cool 5 minutes before removing loaf from pan. Also loosen edges with clean knife.
Serving Size: Use 2 small bread loaf pans and slice each into 8 pieces.
