Ingredients

    1 large fillet tilapia or 2 small
    Can of diced tomatoes
    Vegetables of your choice
    Quinoa (optional)

Tips

Cooking time will be longer for frozen fish and will depend on your oven. Quinoa is optional (good way to get added nutrition). I sometimes add capers for an added zest.


Directions

Preheat oven to 350
Chop vegetables
Spray dish with cooking spray
Spice Fish Fillet and add to dish
Add vegetables
Add tomatoes
Spice to preference
Cook until fish flakes
