Introduction

This is a vegan recipe, compatible to the Daniel Fast. It was hard to find recipes so I have made up a few. This is one that we really liked. We agreed it would be good with walnuts added. Ingredients

    1 cup cooked brown rice
    1 cup red grapes, cut in half
    2 small, seedless Clementines, peeled and sectioned
    1 small avocado, peeled and cubed
    2 teaspoons light olive oil
    2 teaspoons red wine vinegar
    2 tablespoons unsweetened apple juice

Directions

Cook your rice according to directions and cool. Measure 1 cup into a 2 quart mixing bowl, add cut up grapes, sectioned Clementines (or mandarines), and cubed avocado. Mix olive oil, red wine vinegar, and apple juice well in small bowl or custard cup and pour over salad. Mix well. Serve over a bed of your choice of greens or serve as is.
