Ingredients

    1 Mango chopped
    1 cup red pepper diced very small
    5 green onions, chopped on an angle (just looks pretty)
    As much cilantro as you like, at least .25 cup though
    2 tbsp red wine vinegar
    1 tbsp of grape seed oil
    1 cup uncooked quinoa
    2 cups of water for cooking quinoa
    .5 cup of black beans

Directions

Cook quinoa as directed. While cooking mix all the other ingredients together. Mixed cooled off quinoa with rest of ingredients, salt and pepper to taste. Chill and enjoy.

Serving Size: 6 servings, maybe little more
