Ingredients

2 medium roma tomatoes
1 tbsp olive oil
1 tsp garlic (or more if you like)
Italian seasoning to taste (McCormick's dried herb mix contains marjoram, thyme, rosemary, savory, sage, oregano and basil. Any blend of some or all of those herbs or Herbs de Provence would also work well)
Black pepper to taste (fresh ground is best)
Optional: 1 tbsp grated Parmesan cheese. Not included in calories- adds 23 calories and 1.5g fat
Tips
Roma tomatoes are easy to find year-round. This recipe also works extremely well with garden tomatoes and fresh herbs in the summer!
Directions
Pre-heat your broiler (high setting, if there's a choice).
Slice each tomato in half and place on a baking sheet. Brush or drizzle olive oil over each tomato half. Sprinkle with garlic and seasonings. Broil for 10 minutes, or until tomato is softened and edges are browned. If using Parmesan cheese, remove tomatoes after five minutes, top with cheese, return to broiler for remaining five minutes.
Serving Size: makes 4 half tomatoes
