Ingredients

    1.5 cups flour
    .5 cups wheat flour
    .5 t baking soda
    2 t baking powder
    .25 t salt
    1 t cinnamon
    2/3 c chopped nuts (pecans or walnuts)
    1 egg
    .75 c light brown sugar, packed
    1/3 c veg. oil
    1.5 c mashed ripe bananas
    1 t. vanilla extract

Tips

Try substituting applesauce for the oil or eliminate nuts to reduce calories.


Directions

combine dry ingredients in one bowl. In another bowl, beat eggs, sugar, oil, banana, and vanilla. Fold egg mixture into dry ingredients just until moist. Do not over mix. Place about 1/3 cup mixture into lined muffin tin. Bake 375 until toothpick comes out clean.
